Punched Up Potato Salad
This is a hybrid traditional and German style potato salad that uses bacon grease for dressing.
- 1.5 lbs. of Potatoes
- 1/3 cup of Olive Oil-Based Mayo
- 6 pieces of Thick Cut Bacon
- 1 tbsp. of Punched Up Potato spice blend
- Fresh Parsley
- Fresh Chopped Chives (optional)
- Chop and boil the potatoes until fork tender, 3/4 inch cubes work nicely. Drain and set them aside.
- Cut the bacon into half inch segments and fry until crispy. Remove the bacon pieces and drain them, but keep the grease in the pan.
- Mix the mayo, potato seasoning and 2 tbsp. of bacon grease together in a large bowl and then stir in the potatoes, they will still be slightly warm.
- Garnish with 2 tbsp. of fresh chopped Parsley, and 1 tbsp. fresh chopped chives if you like those and want some extra zip. Serve warm.
